Instructions

Prepare Oven and Pan:
Preheat oven to 400°F (200°C). Line a sheet pan with parchment paper.
Mix Filling:
In a bowl combine black beans, corn, bell pepper, red onion, cumin, smoked paprika, chili powder, garlic powder, salt and pepper. Toss well.
Prepare Tortilla:
Place a tortilla on a flat surface. Cut from center to edge to create one radius.
Assemble Quarters:
Mentally divide tortilla into quarters. Add bean mixture to one quarter, cheddar to next, Monterey Jack to third, and reserve fourth for optional toppings.
Fold Tortilla:
Starting at the cut, fold quarter over quarter until a layered triangle forms.
Repeat for All Wraps:
Repeat with all tortillas and fillings.
Arrange on Pan:
Place folded wraps on prepared pan. Brush lightly with oil or spray with cooking spray.
Bake:
Bake 15–20 minutes, flipping halfway, until golden and crisp.
Serve:
Serve hot with salsa, sour cream, avocado, and cilantro if desired.
