15 - 1/2 cup white chocolate chips

# Method:

01 - Line an 8x8-inch baking pan with parchment paper, leaving overhang for easy removal.
02 - In a large bowl, mix almonds, pistachios, pumpkin seeds, dried cranberries, apricots, blueberries, oats, and crisp rice cereal.
03 - Over medium heat, stir together honey or maple syrup, almond butter, unsalted butter, cinnamon, salt, and vanilla extract in a small saucepan until melted and smooth, about 2 to 3 minutes. Remove from heat.
04 - Pour the warm binder mixture over the dry ingredients and stir until all components are evenly coated.
05 - Transfer the mixture to the prepared pan and press firmly and evenly using a spatula or the back of a measuring cup.
06 - Sprinkle white chocolate chips and festive sprinkles evenly over the surface and gently press into the mixture.
07 - Refrigerate for at least 1 hour or until set and firm.
08 - Lift the set mixture from the pan using the parchment overhang, cut into 12 bars, and store in an airtight container in the refrigerator for up to one week.
