Sausage Peppers with Rice (Printable)

01 - 4 Italian sausages (pork, chicken, or turkey; approximately 14 oz total)

02 - 1 large red bell pepper, sliced
03 - 1 large yellow bell pepper, sliced

06 - 2 cloves garlic, minced

# Method:

01 - Rinse the rice thoroughly under cold running water. In a medium saucepan, bring the chicken or vegetable broth to a boil. Add the rice, reduce the heat to low, cover, and simmer for 15 minutes or until rice is tender and liquid is absorbed. Remove from heat and let the rice stand, covered, for 5 minutes. Fluff with a fork before serving.
02 - While the rice cooks, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sausages and cook, turning occasionally, until they are nicely browned on all sides and cooked through, about 12 to 15 minutes. Remove the sausages from the skillet and set aside to cool slightly. Slice the cooked sausages into 0.5-inch pieces.
03 - In the same skillet, add the remaining tablespoon olive oil. Add slices of onion and all three bell peppers. Sauté for 5 to 7 minutes until the vegetables are soft and lightly caramelized.
04 - Stir in the minced garlic, dried oregano, dried basil, crushed red pepper flakes if using, and season with salt and freshly ground black pepper. Cook for 1 minute until fragrant.
05 - Return the sliced sausages to the skillet. Mix well and cook for another 2 to 3 minutes until heated through.
06 - Arrange the prepared rice on individual plates or a serving platter. Spoon the sausage and pepper mixture over the rice. Garnish with fresh parsley if desired and serve immediately.
