# Expert Advice:

01 -
  • It comes together in under 15 minutes of actual work, then practically makes itself while you sleep or go about your day.
  • The texture contrast between creamy pudding, juicy berries, and chocolate shavings keeps every bite interesting without being fussy.
  • You can meal-prep four servings at once, which means guilt-free breakfast for days without the morning scramble.
02 -
  • Chia seeds need liquid to work their magic—if your pudding is still too thin after four hours, you either didn't use enough seeds or your liquid ratio was off; next time, use less milk or more seeds.
  • Strawberries release water as they sit, so if you're prepping these jars ahead, layer them no more than a few hours before eating, or the bottom of your pudding will become soup-like and lose its texture.
03 -
  • Buy chocolate in a block and shave it with a vegetable peeler rather than using pre-shaved chocolate, which tastes stale and never creates those pretty curls.
  • If your strawberries aren't especially flavorful, the lemon juice becomes even more important—it can actually rescue a mediocre berry and make it taste like more than it is.
