# Components:

01 - 4 cups filtered water
02 - 1/4 cup organic cane sugar
03 - 2 tablespoons water kefir grains or ginger bug
04 - 1/4 cup fresh lemon juice
→ Flavoring
05 - 1/2 cup fresh orange juice
06 - 1/2 cup fresh lime juice
07 - 8 fresh mint leaves
08 - 4 thin orange slices
09 - Ice cubes, to serve
# Method:
01 - In a sanitized glass jar, dissolve cane sugar in filtered water. Incorporate water kefir grains or ginger bug, along with fresh lemon juice. Use a non-metallic spoon to mix gently.
02 - Cover the jar with a breathable cloth or coffee filter, securing with a rubber band. Leave to ferment at room temperature (68–77°F) for 24 to 48 hours, until the mixture becomes lightly carbonated and tangy.
03 - Remove kefir grains or ginger bug using a fine mesh strainer. Discard, or reserve cultures for future use.
04 - In a pitcher, blend the fermented soda base with orange juice, lime juice, and mint leaves. Stir gently to combine.
05 - Fill serving glasses with ice cubes. Pour soda mocktail over ice, garnishing each glass with an orange slice and additional mint as desired.
06 - Serve immediately to retain optimal effervescence and freshness.
