12 - Chopped fresh cilantro

# Method:

01 - Combine all salsa ingredients in a bowl. Stir until smooth and well combined. Adjust chipotle pepper and salt to suit your preference.
02 - Using a small, sharp knife, carefully cut jack-o'-lantern facial features into four of the flour tortillas.
03 - Heat a large skillet over medium heat and add the neutral oil. Place one whole tortilla in the skillet. Evenly distribute the shredded cheese over this tortilla. Top with one of the face-cut tortillas. Cook for 2 to 3 minutes per side, until the tortilla is golden brown and the cheese is fully melted.
04 - Repeat the assembly and cooking process with the remaining tortillas and cheese. Slice the cooked quesadillas and serve immediately with the prepared smoky pumpkin salsa, topped with chopped cilantro and an optional wedge of lime.
