01 - Line an 8x8-inch baking pan with parchment paper.
02 - In a large mixing bowl, blend the rolled oats, almond or peanut butter, honey or maple syrup, melted butter, vanilla extract, and salt until the mixture is cohesive. Firmly press the mixture into the prepared pan and refrigerate while preparing the gummies.
03 - Pour fruit juice into a small saucepan and sprinkle gelatin evenly over the juice. Allow to rest for 5 minutes. Gently heat over low, stirring until the gelatin completely dissolves. Incorporate honey or agave syrup, mix thoroughly, and transfer the mixture to a parchment-lined small baking dish. Refrigerate for 45–60 minutes until firmly set.
04 - Once set, remove the gummy slab and slice into small cubes.
05 - Retrieve the chilled oat base from the refrigerator. Scatter homemade gummy cubes, freeze-dried fruit, and freeze-dried candy evenly over the base. Press gently to adhere toppings.
06 - Place the pan back in the refrigerator for 10–15 additional minutes to secure the toppings.
07 - Lift the snack slab out using the parchment paper. Slice into 12 bars and serve.
