- Sprinkle chicken breasts evenly on both sides with salt and ground black pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken breasts for 5 to 6 minutes per side until the surface is golden and the centers are fully cooked. Transfer to a plate and cover to keep warm.
- Lower heat to medium and add unsalted butter and minced garlic to the same skillet. Sauté garlic for 1 to 2 minutes until aromatic, taking care not to let it brown.
- Pour in chicken broth and use a spatula to scrape any caramelized bits from the pan base. Allow to simmer for 2 to 3 minutes, reducing slightly.
- Stir in heavy cream, grated Parmesan, and dried Italian seasoning. Simmer, stirring occasionally, for 3 to 4 minutes until the sauce thickens to desired consistency.
- Return chicken breasts to the skillet, spoon sauce over the top, and simmer for an additional 2 to 3 minutes until chicken is warmed through and thoroughly coated.
- Sprinkle chopped parsley and additional Parmesan cheese over the dish before serving. Serve immediately alongside rice, pasta, or potatoes.
