- Preheat oven to 350°F. Line a 9x13-inch baking pan with parchment paper, allowing paper to overhang on the sides for easy removal.
- In a large mixing bowl, whisk together all-purpose flour, baking powder, baking soda, salt, and granulated sugar until well combined.
- In a separate medium bowl, whisk together whole milk, eggs, melted butter, and vanilla extract until smooth.
- Pour the wet ingredients over the dry ingredients and gently mix until just incorporated. Avoid overmixing to preserve a tender crumb.
- Lightly fold the crushed mini pretzels and shredded cheddar cheese into the batter using a spatula.
- Spread the batter evenly into the prepared pan, smoothing the top.
- Position the pan in the center of the oven and bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.
- While baking, combine granulated sugar and ground cinnamon in a small bowl and set aside.
- When bars are finished baking, immediately brush the surface with melted butter and evenly sprinkle with the cinnamon-sugar mixture.
- Allow bars to cool in the pan for 10 minutes then lift out using parchment paper. Cool further on a wire rack before slicing into bars. Serve warm or at room temperature.
