Mozzarella, tomatoes, basil, and sourdough meet balsamic glaze for a flavorful, melty, vegetarian main.
# Components:
→ Bread & Cheese
01 - 4 slices sourdough or country bread
02 - 4 ounces fresh mozzarella, sliced
→ Vegetables & Herbs
03 - 1 medium ripe tomato, sliced
04 - 8 fresh basil leaves
→ Condiments
05 - 2 tablespoons unsalted butter, at room temperature
→ Balsamic Glaze
06 - 2 tablespoons balsamic vinegar
07 - 1 teaspoon honey or brown sugar (optional, for extra sweetness)
→ To Taste
08 - Salt
09 - Freshly ground black pepper
# Method:
01 - In a small saucepan over medium heat, simmer balsamic vinegar and optional honey or brown sugar until the mixture reduces by half and becomes syrupy, approximately 3 to 4 minutes. Allow to cool.
02 - Spread unsalted butter evenly on one side of each bread slice.
03 - On the unbuttered side of two bread slices, arrange half the mozzarella, sliced tomato, a pinch of salt and pepper, and basil leaves. Layer the remaining mozzarella on top and cover with the second bread slice, buttered side facing outwards.
04 - Preheat a nonstick skillet over medium heat. Place sandwiches in the skillet and cook for 3 to 4 minutes per side, pressing gently as needed, until bread is golden and cheese has melted.
05 - Remove from heat, drizzle with balsamic glaze, slice, and serve immediately.
